Mango, macadamia and chilli salad

There are two famous food pairings in this recipe; mango with macadamias and mango with chili. This flavour combo wins every time and is perfect for a hot summers day. 

Ingredients (Serves 2)

Two large handfuls of mixed salad leaves 

1 large mango, peeled and sliced into strips 

¼ cup toasted macadamias, chopped 

½ ripe avocado, sliced 

1 small cucumber, peeled into ribbons 

¼ cup mayonnaise 

1 tbsp sweet chilli sauce to taste 

Optional: roast chicken or BBQ’d prawns 

 Method

  1. Wash and dry salad leaves before adding to a large serving bowl or plate.

  2. Arrange cucumber ribbons, sliced avocado and mango onto salad leaves.

  3. Sprinkle chopped macadamias.

  4. Combine mayonnaise and sweet chilli sauce into small mixing bowl. Squeeze the remaining juice from the mango seed into this mixture to achieve a runnier consistency. 

  5. Drizzle over salad. Gently combine. 

  6. If you are serving with protein, place on top of salad either cold or warm and serve immediately.
