You Bread My Mind

Bread has been demonised for years now. It's safe to say almost all of us have feared bread at some point in the past or still do to this day. Oddly enough, when you look at diets across different cultures, you will find a traditional bread of some description. For example, Roti in India, Pita from the Middle East and Rye throughout Europe. 

The problem isn't bread itself.

The problem is the mass production of bread due to Westernisation. The Bran and Germ (the nutrient-dense outer shell and sprout) of the wheat kernel are removed leaving solely the Endosperm (the starchy-dense centre). Because of this process, we are left with a highly-refined, high-carbohydrate food with little to no nutrient value. 

The rule when shopping for bread is to purchase wholemeal, wholegrain and sourdough varieties. You can also change up the grain type, trying spelt and rye from time to time. Along with bread, it’s important eat a variety of other complex carbohydrates such as brown rice, legumes (chickpeas and lentils) and wholemeal pastas.

Different ways to have your bread:

  • Avocado, salt, pepper and a sprinkle of chilli flakes. You can top with goats cheese, haloumi or tomato.. the options are endless!

  • A single slice drizzled with olive oil and used to soak up pumpkin soup.

  • Tuna toastie with mayo and rocket. (Don't diss until you try.)

  • Homemade or store-bought basil pesto, wilted spinach and a perfectly poached, fried or scrambled egg.

  • Natural peanut butter or another nut butter simply by itself or with your choice of fruit and a sprinkle of chia seeds. I love this combo with banana or red papaya.
